Usually great chefs specialize in one particular venue. Some are renowned pastry chefs while others might be famous for their main dishes. Know yourself and the talents you possess. If you struggle with baking then perhaps you should concentrate on what you do well and leave the baking to the pastry masters. 

Gourmet food is usually served in moderate to small quantities. This is so that you can taste and appreciate each and every flavor in your meal. You are not overwhelmed by having a huge plateful of food in front of you where flavors run into each other and your meal loses its identity. 

A great gourmet chef will also experiment with different recipes. Adding something new and different to a pasta dish can make it become an overnight success.
